Then we turn the conversation to the cuisine of Mexico with Eddie Garza, senior manager of food and nutrition for HSUS, and author of Salud! Vegan Mexican Cookbook, a wonderful vegan take on traditional Mexican delicacies and some Tex-Mex thrown in too.
